On The Table

For my peanut butta lova :) 

Autumn Salad that has been on the table a few times this year, I love 
the apple cider vinaigrette.  

First time making these bad boys. Chickpea Sweet Potato Quinoa Burgers. YUM-O.
For left overs, I mashed them up and put them in a wrap with spicy mayo. 

Just made this tonight, we had all the ingredients already and
 no cream required! Substitute for whole wheat penne and a mediterranean  
seasoning instead of parsley. 

Tomato-Basil Spinach Risotto, I served this with a simple chicken. 
Would be better if our tomatoes were in season :) 


Are you seeing a trend here? I basically use the blog Iowa Girl Eats and 2 Martha Stewart books to make our menus each week. Once in a blue moon, I will use other recipes I have found from Pinterest.  I like to plan 4-5 menus so we don't over buy and to stay healthy! Any recommendations? 


Something new on the table this week were smoothies. We bought a VitaMix but unfortunately the voltage/watts (long techie story) doesn't work, but we have been using our old blender. Each night we make a smoothie to bring to work for the next day. Ry has been able to get right into the green ones, me on the other hand, it's taking time. I'll post more about some recipes we have tried this week!

On The Table

I haven't been so good at posting what we have been eating but here are some favorites from the past week. 


With a light dijon vinaigrette from Martha. I love this lighter version of the
oh so popular Belgian salad! Who doesn't love a heaping about of goat cheese? 

 Second time around, we made it with bio-bacon and 
they weren't as good! Recipe from Hint of Honey (just discovered
her blog) 


Black bean and Sweet Corn Guacamole Dip from my girl (I feel like I can
call her my girl since we eat the same foods) Iowa Girl Eats 


And last but not least, tonights meal from Iowa Girl, again. I just need to talk about this
recipe. This was the first time I have ever cooked tofu... and the first time I have ever eaten a MANGO. Seriously folks. I went to town. It was so delicious and juicy. What have I been doing with my life? Just walking past mangoes at the store, not any more! This pizza has a peanut sauce, broccoli, green onions, mozzarella cheese, and topped with chopped peanuts, mangoes, and cilantro. Just make it.

On the Table

Here's a glimpse of some things we ate this past week (unfortunately no Thanksgiving recipes!) 




This isn't the actual recipe we use, Ry is the sweet potato 
guy and seasons these bad boys with a ton of spices... make
sure to use some flour or corn starch so the spices stick! 

First time making this and it was delicious! 
Great for Meatless Mondays :)



This is my go to salad when I am craving pesto - super easy! 


I had to use the last pumpkin jar and we were in the mood
for a bit of oatmeal, these did the trick. 

Last Saturday the Brugge International Club had a Christmas Market to raise 
money for a local cause and I thought it would be fun to to 'donate' some bread 
for them to sell. Although, we didn't get to try the lemon or chocolate swirl bread - they 
were simple and smelled great. I then packaged them with the Baked with Love tags (free download) and wrapped them with some red twine and green wrapping paper.
After making this bread I started following Sally's blog. Great baking 
recipes!

On the Table

I really enjoy trying new recipes each week and would love to share with you all some of my favorites. Maybe this can turn into a weekly event, we will see!




This was the best pick me up between breakfast and lunch, so dense and rich. I only used 1 cup of sugar and could have used less (it calls for 3). I also had extra batter, which made about 4 muffins. We will be making this one again! 


I started day dreaming about these bad boys the day after we made them. The pancetta really adds a smokey and salty flavor. The best part is they are super easy to make and perfect for the winter time. 


Quinoa is usually a dish we make at least once a week. This fall version, from Iowa Girl Eats, was delicious! The parmesan cheese on top really added to it.

Pumpkins Galore



Finding cans of pumpkin puree is impossible in Belgium. Last month when we went to the Commissary (a large base) to stock up on food. I went a little overboard on pumpkin products. This past week I have made two new pumpkin recipes. The whoopie pie recipes calls for too much cream cheese icing, so I used the same icing in the cake rolls. 

1. Pumpkin whoopie pies 
2. Pumpkin cake rolls 

Both were relatively easy and delicious. I still have left over icing (which is perfectly good by itself!) so who knows what I will make next.
